Only as accurate as the ingredient figures you started from. Cooking losses, absorbed oil and drained liquid all shift the real total.
Calories per serving is the recipe total divided by the number of servings. A 2,400 kcal dish serving six is 400 per portion — and if the cooked dish weighs 1,800 g, that is 133 kcal per 100 g.
How to work out calories per serving
The per-100-gram figure is the one worth having, because it survives serving-size disagreements. "One serving" is a decision rather than a measurement, and a dish that serves six generously serves four honestly. Weighing your actual portion against a per-100-gram figure removes the argument entirely. It also makes home cooking directly comparable with packaged food, which is always labelled per 100 g in Europe for exactly this reason.
Questions
Add the calories of every raw ingredient, then divide by servings. Oil and fats are the ones most often under-counted.
