Halving a recipe that calls for three-quarters of a cup

Half of three-quarters of a cup is three-eighths of a cup, which is six tablespoons — a measurable quantity, even though no measuring cup carries a three-eighths mark. The trick to halving any recipe is to move down a unit rather than to look for a fraction that does not exist on your equipment.

A US cup is 16 tablespoons and a tablespoon is 3 teaspoons, so almost every awkward fraction of a cup resolves cleanly once expressed in the smaller measure.

The two thirds cases are the ones worth writing down. A third of a cup is 5 tbsp + 1 tsp because 16 ÷ 3 is 5.333 tablespoons, and a sixth is 2 tbsp + 2 tsp for the same reason.

Why does dividing by a fraction make the number bigger?

Because dividing asks how many of the divisor fit into the dividend, and small divisors fit many times. Dividing 3 by 1/2 asks how many halves are in three, and the answer is 6.

The mechanical rule — flip the second fraction and multiply — is a consequence rather than a trick. Dividing by 1/2 is the same operation as multiplying by 2, which is what "flip and multiply" is doing.

This is the step that goes wrong when scaling a recipe up. Doubling means multiplying by 2, not dividing by 1/2, even though both produce the same answer; halving means multiplying by 1/2 or dividing by 2, and typing the wrong one into a calculator gives four times the flour.

Why is reducing the step teachers mark down?

Because the same quantity has infinitely many representations and only one is conventional. Adding 1/6 and 1/3 gives 3/6, which is correct, and 1/2, which is the answer as it is normally written.

Reduction divides both parts by their greatest common divisor, found by Euclid’s algorithm — divide, take the remainder, repeat until it is zero. In the kitchen it matters for a different reason: 3/6 of a cup has no mark on the jug and 1/2 does.

Doubling has its own version of the problem in reverse. Two lots of 3/4 cup is 1 1/2 cups, which is easy; two lots of 2/3 is 1 1/3, which is a cup plus 5 tbsp + 1 tsp, and at that point measuring the whole thing in tablespoons from the start is faster than assembling it from two units.

Should you weigh instead?

For anything dry, yes, and it removes this whole class of problem. A cup of flour varies by around a third depending on whether it was scooped, spooned or shaken, which is a far larger error than any rounding introduced by halving.

Volume measurement holds up much better for liquids, where a millilitre is a millilitre regardless of technique. The rule of thumb: halve by volume for liquids, and convert to weight for flour, sugar and anything that compresses.

Where a recipe is already in grams, halving is division and nothing else. This is the strongest practical argument for metric baking, and it has nothing to do with which system is better in principle.

Scaling by anything other than a half follows the same method. Two thirds of 3/4 of a cup is 1/2 a cup exactly; three quarters of 2/3 is also 1/2. Awkward-looking multipliers frequently produce clean answers, and it is worth doing the fraction arithmetic before reaching for a decimal that will need rounding.

What does not halve?

Three things, and each one causes a different failure.

  • Eggs. Beat one and use half by weight, or scale the recipe by two thirds so that a whole number of eggs works.
  • Cooking time. A halved cake in a smaller tin bakes faster, but not by half. Check early and use a skewer rather than the clock.
  • Pan size. Halving the volume of a batter needs roughly half the area at the same depth, which is a different tin rather than the same one half-filled.

Questions people ask

Can I mix fractions and whole numbers? Yes — 1 1/2 is read as three halves, so 1 1/2 × 2/3 is exactly 1. Mixed numbers are converted to improper fractions before anything else happens.

Can I enter a decimal? Decimals convert, though the result is only exact where the decimal is. 0.75 is exactly 3/4; 0.333 is not exactly a third and will not reduce to one.

What about UK and US cups? They differ. A US cup is 236.6 ml and the metric cup used in Australia and parts of Europe is 250 ml — close enough to substitute in a stew and not in a cake.

Is a tablespoon the same everywhere? No. It is 15 ml in most places and 20 ml in Australia, which on four tablespoons of raising agent is a difference worth catching.
