Brew ratios are stated by weight: 1:16 means one gram of coffee to sixteen grams of water, so 500 g of water needs 31 g of coffee. A cocktail ratio splits a total volume by parts, so a 2:1:1 sour in a 90 ml drink is 45 ml of spirit, 22.5 of citrus and 22.5 of sweetener. A pasta portion is 100 g of dry pasta a head. All three are ratios, and all three fail in the same way when the second variable is ignored.
For coffee that second variable is grind. For cocktails it is dilution. For pasta and rice it is how much water the dry weight takes up.
Why does changing the ratio not fix a bad coffee?
Because ratio sets strength and grind sets extraction, and the two are frequently confused. A brew that tastes thin and sour is under-extracted and needs a finer grind or a longer contact time — adding more coffee at the same grind makes it stronger and still sour.
A brew that tastes bitter and dry is over-extracted and needs a coarser grind, not less coffee. The diagnostic is the taste rather than the strength, and once the grind is right the ratio becomes a preference dial between about 1:15 and 1:17.

Water matters nearly as much as either. Very soft or distilled water extracts poorly and produces flat, hollow coffee because minerals participate in extraction; very hard water over-extracts bitter compounds and scales the kettle.
Where does the coffee go?
Into the grounds. Twenty grams at 1:16 takes 320 g of water and brews to about 280 ml in the cup, because the spent grounds retain roughly two grams of water per gram of coffee.
That is why a recipe stated as "water in" and one stated as "coffee out" are different numbers, and why brewing to a target beverage weight is more repeatable than brewing to a target water weight. It matters most on small brews, where the retained water is a large fraction of the total.
Why is dilution an ingredient?
Because shaking a drink with ice adds roughly 20 to 25 per cent of its volume in water and drops the temperature sharply, and both are essential to how the finished drink tastes. That 90 ml sour finishes near 108 ml in the glass.
A batch made without allowing for dilution tastes harsh and hot, which is the usual failure of pre-mixing cocktails for a party. The fix is to add the water deliberately — roughly a fifth of the batch volume — and chill it properly rather than relying on ice in the glass.
Stirred drinks dilute less than shaken ones, around 15 to 20 per cent, which is part of why a martini and a sour are built differently. The ratio and the technique are chosen together.
How much pasta and rice?
A hundred grams of dry pasta for a main course and 75 as a starter; 60 g of dry rice as a side and 75 as a main. Both roughly double or better in cooking, which is why the dry portion looks mean and the cooked one does not.

Fresh pasta is a different calculation because it already contains water — it absorbs far less and cooks in a fraction of the time, so a dry-weight portion applied to fresh gives too much.
The rice water ratio depends on the grain and the method. Absorption cooking of white long-grain wants about 1.5 times the rice by weight; brown wants closer to 2.5 and about twice the time; basmati does well at 1.5 after a soak.
What do the three have in common?
A fixed relationship that only works when the technique is held constant. Change the grind, the shake or the pan and the same ratio produces a different result, which is why every one of these numbers is a starting point rather than a specification.
They also all reward weighing over measuring, for the same reason a recipe does. Coffee by volume varies with roast and grind; a cocktail poured free-hand varies by a third; a pasta portion judged by eye is almost always generous. A scale removes the variance in all three at once.

Should I weigh coffee or scoop it? Weigh. A scoop measures volume and coffee density varies by roast and grind, so the same scoop can be several grams apart between two bags.
Does salt in pasta water matter? It seasons the pasta itself, which nothing later can replicate. Around 10 g per litre is the usual figure — the water should taste seasoned, not like the sea.
Do I rinse rice? For basmati and long-grain, rinsing removes surface starch and gives separate grains. For risotto and paella you want that starch, so rinsing works against the dish.
